  • "Almond Bark" Can you make your own?

    I have looked at the pix (and they are amazing, I might add) and have looked at many recipes for cakeballs...but what I want to know is...Can I make my own almond bark to coat the balls? Somebody must have a recipe for the white and chocolate almond bark...thnx

    My mom used to make dipping chocolate with paraffin wax and chocolate chips.....

    1/2 cake paraffin
    12 oz bag chocolate chips.

    One way to make dipping chocolate:
    12 oz choclate chips and 2 T. oil/shortening or butter


    Keep water and steam away from chocolate (no margarine either).
    Do not overheat, just enough to melt. I do it in the microwave 60 seconds. Double boiler is another way.

    I found this one:

    4 sq. unsweetened chocolate
    1/2 cake paraffin wax (2 1/2 x 2 1/2 inches)
    12 oz. chocolate chips

    Melt unsweetened chocolate and paraffin in the top of a double boiler over water (medium-high heat). Lower heat temperature and add chocolate chips, stir to melted. Keep temperature low.

    I expect you can do the same with white chips, but you may as well buy white coating.... as white chocolate isn't rally chocolate.

        There has to be a way to do it w/o parafin wax... I don't like to use wax. How about a ganache? It's thin enough... do ya think that would work??

          Isn't almond bark made by melting the white bulk 'chocolate' (it isn't really chocolate at all) and adding toasted almonds, slivers or sliced almonds, then spreading it out on waxed paper to cool? My mother used to make a peppermint candy reminescent of Fannie Mae's candy that only required mixing melted white choc with crushed candy canes. Put a few canes in a heavy Ziploc bag and pound away! Good way to work out some frustrations! LOL

            I have a feeling that candy recipes that call for paraffin don't really require it. The candy won't be as shiny and may melt quicker when holding it. But GOSH DARN IT, WHO HOLDS CANDY IN THEIR HANDS ANY LONGER THAN TO POP IT IN THE WAITING MOUTH!!! LOL

              I just bought the almond bark at Hobby Lobby and Michaels...but it's called dipping chocolate...and almond bark doesn't have any almonds in it...for some unknown reason, dipping chocolate is called almond bark....expensive...$3 per pound...that's why I want to make my own, but I don't want to use wax...

                To make it 'from scratch' would probably cost you more than $3 a pound. Cocoa butter is pretty expensive. I have always known almond bark as dipping chocolate. I buy bars of it at Sams(white an chocolate). I have done the one with wax & chips. It isn't as bad as it sounds and you can get a much thinner layer of chocolate (if that is important).

                Dipping with melted chips, you often get the whitish color on the outside (not as pretty).
