from scratch - "Southern Cakes" by Nancie McDermott.
This is not only a very good cookbook but a great read too. Now while I am south of the Mason-Dixon line, I'm not a southern per se in that I don't like excessively sweet desserts as most southerners seem to be prefer, so admittedly there are a few cakes in here I probably would never make. There's a chapter just on coconut cakes and a very nice variety of pound cakes. The photographs (each recipe is NOT pictured) are beautiful and makes one want to rush right out to the kitchen and start baking.
