my mouth is watering!!
I have no idea what to have. I am thinking chilli and some rolls as the weather is yucky. I may make a pie for dessert, as I have a ton of rhubarb. not sure...might keep surfing to see what else I will make!!! LOL
Two days in a row and I can say KITCHEN CLOSED!!! Hubby wants to take a road trip in the Mustang since he put a nice coat of wax on it. Boy it looks nice. May wander into downtown Pittsburgh today or as I suggested the Allegheny Forest somewhere. It's been awhile.
So, I have no idea where we will end up

I'm at my brother and SIL's home as she had a hysterctomy on Thursday. With three kids, I decided she would need some help. Last night I made, beef enchiladas, spanish rice and guacamole. We have plenty left over, but her Mom is here too and is going to make Breaded beef cutlets, mashed potatoes and cabbage with bacon for lunch. So for dinner we'll have a choice of my leftovers or hers. Both sound yummy.
Saturday Night Vidalia Onions

4 large Vidalia onions
4 beef bouillon cubes
butter
Freshly ground black pepper
Prepare a fire in a charcoal grill or preheat oven to 350 degrees F. Trim and slice from the top of each onion, and peel the onion without cutting off the root end. Using a potato peeler, cut a small cone shaped section from the center of the onion. Cut the onion into quarters from the top down, stopping within a 1/2-inch of the root end. Place a bouillon cube in the center of each onion, slip slivers of butter between the sections, and sprinkle with pepper. Wrap each onion in heavy duty foil and place the onions directly onto the hot coals. Cook the onions for 45 minutes turning every so often.
To serve, place each onion in individual bowl because the onions will produce a lot of broth, which tastes like French onion soup. This is from "Paula's Home Cooking". We had them tonight and they are awesome!
We are having honey garlic butter chicken in the grill pan. Roasted new potatoes with garlic and roasted asparagus. Homemade fudgy brownies for dessert!
