  • Substitution for Foie Gras

    Tucked inside the 1975 version of New Orleans Antoine's Restaurant cb is a receipt for "Canape Rothschild" . Ironically this trend of loaded toast is making a recent comeback, mainly with sliced avocado. Anyway, it calls for a spread of Foie Gras . I know its quite popular , but I am curious if there is something I may substitute in its place? its smeared on the toast before adding the other ingredients.

    I would try Braunschweiger or Liver Loaf which is a Lunch Meat.Its not Foie Gras,nor is it spreadable in of itself.But,you could make a spread with it by mixing in mayo etc. to the Liver Loaf & pulverize it into a paste.I would ask the butcher/deli section if they carry either.Liver Loaf is in the lunch Meat section of the store & Braunshweiger sometimes is in the same area to.Good luck!

      My grocery store sells liver pate in the deli section. No clue how much they charge ?
