Happy Monday!

Wow, February 1st already! It’s been lightly raining most of the day. We’ve been doing some sorting in the house, things we haven’t used or touched in a year are going to be going bye-bye soon. Some of it already made it to the trash.

Dinner tonight is going to be the other half of the Papa Murphy’s Pizza we had a couple of days ago and we’ll have some fruit with it. What are you having for dinner tonight?

It’s hard to believe we are done with a month already!

I’m making shredded pork & cheese enchiladas with my beer refried beans on the side. Easy enough.

Tonight is leftover night. I am wishing I had baked a loaf of beer bread to go with our meal but it is too late now to do that.
