August 23rd Dinner Post

Good Morning!

It is a mostly sunny sky and I do believe the rain has moved on. It rained midmorning yesterday, beautiful sky and got muggier and then boom, another storm passed through at 6:30 and it was still raining at 11. The high will be 80 and the low of 63.

I took the leftover beets last night and put in a jar, added brine and have pickled beets this morning. I'll let then sit another few days in the fridge so the flavor gets more intense.

Grilled cheese, tomato soup and a dish of sliced peaches will be dinner this evening.

More sunshine and heat today!
Well, covid has hit the family yet again, our DD has it 2nd time. Not feeling too awful bad. Her cousin and his gf have it pretty bad. They all went to a concert together Thursday eve.
I have a little maple ham to bake for dinner, picked up a few cobs of corn and will have some hash brown patties along with that.

I have swiss steak in the crockpot. I will probably make some roasted cauliflower to go with it.

It’s another beautiful and comfortable day today, supposed to get really hot again in a couple of days, but only for a day or so. I did a quick grocery run this morning and I’ve got a guy coming by this afternoon to replace the passenger side mirror on my car for me. Back in January we were going up a dark street and Ken was too far to the right and clipped a mailbox and really messed up the mirror. It’s only gotten really bad for the last couple months, so I ordered one on eBay. Subaru dealer wanted $433 for the mirror, plus cost for color matching paint plus installation. NOPE! The one I ordered is black and is close enough and I only paid about $80 for it and it came with the wire harness.

I’m trying out a pressure cooker recipe for paprika shrimp and yellow rice tonight and I’ll have a fresh nectarine with it.

Beautiful late August Day. mid 70s and a cool lake breeze.. a tad of humidity but that's okay. Tonight is no different than the last few week. I've only really cooked a meal from scratch like 4 times since early August. The rest has been Costco heat up meals. Some are so good... can literally travel around the world with different varieties with these dishes. Sometimes I will cook some asparagus or veggie on the side.. sometimes not. Been to darn busy here to worry about it. Been awhile since I have posted.. but I still read the happenings here daily.. Hope everyone is doing well.. Hugs!
