December 19th Dinner Post

Good Morning!

It is cold, cold and maybe it is cold out. the high of 38 and the low of 24. The wind makes it feel so bitter and extra cold.

Dinner will be the split pea soup I pulled from the freezer along with corn bread waffles and some rice pudding.

We got MORE snow!!!! Hubby has been out most of the morning plowing.
I started a cleaning binge this morn, scrubbing shower, cleaning cupboards doors/shelves etc. I need to do my oven but keep putting that horrid job off, ugh. Our 2 fridges will need a good sorting thru before all the festive foods come in. I am going to make one last batch of short bread cookies this aft - I've been waylaid on that chore as well - thought I would use a recipe that does not require rolling out to be easier on my hand...I think they are known as whipped shortbreads? Is that correct? Anyhoo, when those are done I will pop a meatloaf in the oven, sides to be determined.

I’ve definitely thought about making chili this evening but don’t have the ambition or appetite so I will either bake a potato or fix an omelet. I hope tomorrow I get a small pot of chili cooked.

Just a thought but when you cook your meat do some extra and freeze it. Then you can make sloppy joes, meat sauce for pasta, for vegetable beef soup, whatever you want and will make things easier and only one time cleaning up the mess.

It’s been a cold one today, the high temperature was 29° and it’s going down from there. Wednesday and Thursday the highs will be 23° and 24°. Brrrr! I watched the Jan 6th hearing this morning and then mixed up a batch of my favorite turkey burgers and vacuum sealed and froze them. I was just watching Mendi staring out the glass door at the large flock of Chickadees that were hunting bugs in the lawn. She wanted out so bad, but she’ll have to wait until they leave.

I’m having a turkey burger and some pasta salad I made this morning for dinner.

Its pretty chilly out now with the temps at 33 degrees.Yikes!

For dinner this evening we had stacked enchiladas & butterscotch/meringue pie.I had an extra pie crust & pudding,so I made this pie for dessert(I'm going to have to get serious on weight loss after new years or i'm going to gain back the weight I lost in the last year!& that would be awful!)Eek!
