  • January 7th Dinner Post

    Good Morning!

We now have white rooftops, snow covered grass and the high of 35 and the low of 26 along with a chance of light snow off and on today.

I am morphing part of the chicken I cooked yesterday into BBQ chicken and having it over baked sweet potatoes, roasted broccoli and jello with strawberries I froze last summer.

What direction are you going for your dinner tonight?
Heritic, rebel, a thing to flount,
He drew a circle that shut me out.
But love and I had the wit to win,
We drew a circle that took him in.

Cool and cloudy and light sprinkles today. I was sitting in the dining room and looking out the glass door into the back yard when lo and behold, a great big chicken walked across the porch! I figured it belonged to the lady that lives behind me and it came through the fence panel that’s down so I called her and she came and got it. I was afraid Mendi would get her, but that hen was bigger than the cat. Not much else happening today.

I‘m going to get a takeout order of lasagna from Jimmy’s tonight in honor of Ken’s birthday today and Jimmy’s was his favorite place to go. They have the best lasagna I’ve ever tasted in my life.

D’sMom, their lasagna is very meaty, much more so than most I’ve had. They go a little light on the cheese and if they do use ricotta it’s a smaller amount and mixed into the meat sauce. Their food is Italian with a slight Greek influence. All I know is that it’s the best lasagna I’ve ever had anywhere. I get two meals out of the one dinner I ordered, and the house salad that comes with it is excellent too. They make all their own dressings.

          Charlene,

Do you think that it could be a possibility that w/the Greek influence that they might use a Greek cheese in their lasagna?T/Y

I suppose it’s possible, I’ve never asked. The use a lot of meat in it and it’s so good that way. It’s nice that they’re so close and if I want lasagna I can easily get it there and have 2 nights of dinner. More cost effective for me than trying to make it myself.

Is the meat a beef or sausage or mix of both?

It’s a mix of both, and some of their meatballs too. So tasty!
