  • February 1st Dinner Post

    Good Morning!

The high will be 27 and the low of 20 with the wind chill putting it feeling like single digits. Brrrrrrrr!

I have bread rising this morning and that will make the house smell so good by this afternoon. I took leftover pork chops, and shredded them while they were still warm, so today they are heading for the crock pot with BBQ sauce on them and I will put them over toasted homemade bread, slaw, baked beans, deviled eggs and DGS will have the last of the pudding cake.

What will be your dinner this winter night?
Heritic, rebel, a thing to flount,

But love and I had the wit to win,
We drew a circle that took him in.

We enjoyed a day at home today. The gardener came and did his work this morning and then leaving us to enjoy the peace and quiet. Last night we had dinner with our family. Hannah likes pretending that she can't feed herself, preferring to ask Grandma... I don't mind at all. She has a new nanny and Hannah loves her. This nanny will be working all five days of the business week which will make the home run smoother.

Julia made a wonderful glass noodle salad for her and I and gave me two more meals of it to bring home. I looked forward to it all day... best Vietnamese food I've ever had...

We got another dumping of snow! Only supposed to get 1-3 cms and ending up getting like a foot! Hubby is grumbling cuz he has to go plowing again! That's winter for ya!
I had planned on making chicken alfredo for dinner, but hubby noticed there was some leftover ham and asked me to make mac & cheese with ham tossed in....sounds good to me!

Chayote - I've never had the glass noodles, but your picture makes them good pretty spectacular. Would they be a bit like ramen noodles taking up the flavor of whatever light sauce is on them?
I want to make a rice dish that calls for either Fiesta Cheese soup or Poblano Cheese Soup by Campbells. After three or four different grocery stores, it must have been discontinued. I do have Campbells cheese soup and will add some green chilies to it later this week.

I have plenty of choices for dinner tonight so I will just pick one, perhaps Mongolian beef with fried rice that I bought at the hot food bar at the grocery store. There is plenty for my husband and I.

I don’t have a clue quite yet but think I may make tacos this evening. No appetite so far and tired. Probably something lite in calories and light on the tummy too.

It’s hard to believe it’s February 1st already, doesn’t seem possible. It’s been mostly cloudy but dry today, and a few degrees warmer than it has been. I’ve been taking it easy, had a headache and just didn’t feel like doing all that much.

I’m going to make an Asian chicken Caesar salad for dinner, it’s easy and I have everything on hand.

g'day, Vera... not like ramen noodles. Glass noodles are sometimes called Cellophane noodles. They are made from rice or vegetable starch and water and are gluten free. They look like this when they are first cooked. They take very little cooking... a few minutes in hot (not boiling) water and as soon as they soften, you strain them and run cold water through the noodles to stop the cooking process. They are mostly used in salads, kept in long strands and yes, the sauce coats the outside of the noodles.
