    Good Morning!

    The sun is shining it all its glory this morning making the day so lovely and enjoyable.

    I am solo tonight am making myself loaded omelet, and toast.

    What are you doing this Valentine's Day for your Dinner? Going out or staying in and just enjoying the quiet of home?

    It is a beauty day here!
    We have never done anything special for Valentines Day. I guess I'm off on my dates as I was thinking VD was next week so at least I could get hubby a card I got a bouquet of chocolate roses and also some Reese's PB cups and a lovely card. I made a card for hubby and glued cinnamon hearts on it lol
    I plan a making a roasted/glazed peameal chunk, perogies and cauliflower/cheese sauce for dinner.
    I am going to see a movie tonite with my neighbour...off to watch A Man Called Otto.

      It's a beautiful day. Little chilly but suppose to be high 50s. Rain tonight.
      I'm going to get out a chunk of beef tenderloin left from Christmas, shrimp scampi. Baked potato.

        Happy Valentine’s Day! Well, yesterday’s weather sure ran the gamut! Yesterday afternoon it got very windy, then in the evening it started snowing kind of slushy flakes, coming down pretty fast, then it stopped, and then we had pea sized hail for a little while. It was still covering everything this morning and now there are only a few patches in the shaded areas. Today has been quite pleasant for the most part. One thing about the PNW is you can experience all kinds of weather in the same day.

        I’m going to quick fry two small pork chops (about 7 oz total) and I’m going to try out a recipe for a loaded Hasselback potato to go with it. I’ll probably have some fruit with it.​

          Charlene - I have never made a Hasselback potato. Did you use two wooden spoon handles on the sides, so you didn't slice all the way through. What did you top it with?

            Yes, I did use the wooden spoons, works very well. I made a mix of melted butter, EVOO, salt, pepper, garlic powder and dried thyme and brushed it between the slices and all over it. Im going to top it with a little shredded cheddar cheese, sour cream and some diced parsley and green onion. I’m going to post the recipe after dinner.
