April 1st Dinner Post

Good Morning!

I got woke up by a strong storm of thunder and lightning last night that was wild but gratefully did not last more than an hour. The rain pounded and the wind howled while the sky was bright as day and the thunder made the house shake at times. Now we have a clear blue sky but by afternoon it will be April Fools weather with strong winds gusts of 30mph, rain, hail and snow. This is a "pick your weather day" and you can have it.

The high today will be deceptive start of a high of 59 and ending at 29. A major 30- degree drop. This is not a April Fool's joke but reality for today.

Grilled meatloaf and cheese sandwiches, tomato soup and a salad will be dinner tonight.

It was a bumpy night. Three tornados in Indiana. Thankfully not near us. It's 55 now, temps dropping all day. As I look out the western sky is very dark.

Think I'll just do some burgers and ??? I'll come up with sides later. I seem to be in a noncooking rut.

My daughter invited me to dinner today but I decided to stay home. I am already regretting that but I will fix a dinner later and relax.

Happy April Fool’s Day!

It was raining this morning, but it’s pretty out right now. News reports said the Cascades passes were expecting at least a foot of snow today. It’s been quiet here, did some more bill paying and Amazon just delivered my next book club selection so I’m going to get started on that shortly.

I’m going to make sort of a breakfast for dinner tonight. Kind of a take on Hawaiian moco loco but with a New Mexico vibe. Brown rice, beef patty, 2 fried eggs with green chile salsa and cheese. I’ll be in tastebud heaven!
