  • April 3rd Dinner Post

    Good Morning!

Yesterday was such a beautiful day and today is the starting out the same. My daffodils are up and blooming, so I am cutting some today and putting them in a vase for the aroma and beauty in the house.

The high will be 65 and the low of 45 with a chance of rain later in the day, early evening. It is a clear sky at the moment that I will take advantage of for being outside and enjoying the sun.

I am roasting a chicken, gravy, making dressing, mashed potatoes, blistering fresh green beans in olive oil and butter along with garlic, and making a lemon cloud pie for DGS.

What will be your dinner on this Monday?

I had every intention of pulling a pork loin out of the freezer today and fixing that for dinner. However I have a Red Hat luncheon coming up and spent most of my day assembling the table favors for the lunch. They look very cute.

Tonight’s dinner is questionable at best but I have a couple of hard boiled eggs and will likely make egg salad or deviled eggs and a cup of soup.

I love egg salad and deviled eggs. I usually take the deviled eggs and make extra so I can then take them and presto, they become egg salad sandwiches for a day or so.

I wish I could see your favors, I bet they are lovely. Have a nice time.

LTB, if you get a chance, look up Skagit Valley daffodils and Skagit Valley Tulip Festival in Mount Vernon WA. It’s about 10 miles from me and it’s quite spectacular. Those fields are probably really fertile from having the gazillion Snow Geese wintering there.

It’s a pretty day, even though there are still some dark clouds lurking about. I had another one of those nights I couldn’t get to sleep again, too many things hopping around in my head. Nothing upsetting, just weird random stuff. For some reason I was trying to remember the name and artist of a record album I had in 1965 of all things. Thank goodness for Google, I figured it out. Sheesh, that drives me nuts. Just doing minor house stuff and reading today.

I’m going to make a single serving of baked fish with tomatoes and olives, some roasted asparagus and a package of microwave 90 second garlic butter and ghee rice.

Oh my gosh!!!! You were not kidding Charlene. I would just sit someplace and drown in the beauty of it all. Do you go and enjoy the festival or buy some of the flowers or bulbs? I would be bankrupt in a heartbeat. Good thing that is a good distance. Thank for the longing joy of seeing them.

I’ve been to it but the traffic up there is nuts! I just enjoy driving through it but since I have the brownest of thumbs I don’t buy any bulbs. The tulips are late this year, too much rain and cold, but they expect they’ll be out in full in a couple of weeks.

I can imagine how bad the traffic is. Enjoy if you go this year!
