    Good Morning!

    What a wonderful sunny morning radiating from a clear sky. The high will be 62 and the low of 48. I will enjoy this day of sun as the next 5 days are predicted with having rain. Tomorrow a steady rain all day.

    Leftover mac and cheese, smoked sausage, pickled beets and tapioca pudding will be dinner tonight.

    What lovely dinner will you be having?

    Ditto LTB on the weather.
    my chickens are putting out eggs finally. So with an over abundance of eggs we are having sausage egg bake. From the blog Plain Chicken. I've made several things from her site and every one of them were really good. I have this one in my keeper book.

      Just an ordinary day. I did some laundry and crocheted between loads. Nice dinner... John had corned silverside with the usual baked potato, onion and peas; I had ravioli with bolognaise sauce.

      Spending tomorrow afternoon with our grandchildren. Andrew will want to play chess with John all afternoon while Hannah and I will probably play in her toy kitchen with wooden food. It's her favourite game to play.

      Just read that Jerry Springer died... I remember years ago watching his crazy show in which people staged fights between each other... wholesome TV

        I got a laugh off of your post this morning rosie. I thought it said your children are putting out eggs and after 2 more times reading it before I realized it said chickens!!!!!!

        My vision is still a bit blurry but at least I got a laugh out of it.

          yes! the sun is shining! it is still fairly cool tho, but sunshine is so nice to see. The gold finches and cardinals and chickadees are very busy at our feeders this morning.
          We have to go to town again this aft for more tests.
          I am going to make a meatloaf, mashed potatoes and the rest of the broccoli for our dinner. Hope I'm doing the right thing, I'm using low sodium tomato sauce instead of ketchup in the meat mixture and instead of the Stove Top stuffing, I will use oatmeal. Just by quickly looking at meals/recipes on line and trying to figure out healthier alternatives...until we see the dietician.

            Mudder,

            Rinse the potatoes and you will notice how milky the water is. That is the starch and that makes them high in sugar as that is what starch turns into in the body. Rinse 2-3 times and then let sit in cold water, covered, for about and hour or so and then rise again. That will remove a lot of the starch and lower the level of it turning into sugar in the body. Sweet potatoes are a good choice.

            We have an American Diabetics Association web site that is loaded with information, portion size, meals and recipes. See if you can bring it up. It also lists food that you can eat all you want, foods in moderation and ones that should be avoided. A wealth of information.

            Write your questions down and leave room for answers as at first you are so overwhelmed with info that you feel like you need a life jacket.

              Joe puts malt vinegar on fried potatos. That helps with the carbs. I hate anything to do with vinegar. Upping the fiber is a big help. But go slowly with fiber or you'll have very bad side effects

                  We have a Canadian Diabetes website as well...I've have gone on there, but still feeling overwhelmed, I know it will take time.

                    It’s a beautiful day today, finally looking like Spring for sure. It’s getting a late start this year. Tonight is book club and the house we’re meeting at is right on the western shore of Camano Island with a great view of the strait between it and Whidbey Island.

                    I’m not sure what we’ll be having for dinner, I think it will be Thai food, whatever we have will be good!​

                        Not a problem Mudder. You are welcome. Just take it slow, maybe starting with the web site that has the foods you should avoid as that would be the most critical. You are already on track with the oatmeal in the meatloaf. You are a good cook and will know what flavors will go together. Good luck tomorrow.
