Sunday is my neighbor's big birthday. She will be turning the big 6-0. Did I buy her a 60th birthday card - absolutely not. I bought her two 30-year-old cards that she can combine. She will get a kick out of that. Usually, her family doesn't really celebrate with a special dinner, cake, balloons etc. She is such a giving neighbor even though her job is two hours away and she stays Monday through Friday and comes home Friday night. I decided to do something for her. I've got a Chocolate Bundt cake in the oven now. When it cools, I will put chopped strawberries in the "hole" in the center. I am also making a hot dip that will be topped with pepper jelly and putting together some breakfast biscuits made with Grands that will have sausage, eggs, cheese inside. My neighbor also brought a few dishes to my neighborhood gathering three weeks ago and her sheet pans looked like they saw better days so she's getting new sheet pans, a large box of parchment paper and a casserole holder that squeezes small or large depending on the size of your dish. I think she will be very surprised. Can't wait to see her face.

My birthday surprise was a hit. The birthday girl is going to work on her birthday!! She is a nurse and probably working as much as possible because she has two sons graduating - one in May and one in June (high school and college). She will have to take time off during those times with a big party on June 11 for both kids. She will have the party catered with the main courses. It is all the other appetizers and desserts that have to be done. Plus, her kitchen is also undergoing a major renovation and she is not sure if it will be finished by then. I haven't seen the kitchen yet since I want to wait until she can have a grand opening ceremony - lol. It took three large delivery trucks to deliver all her new appliances including a pizza oven in the kitchen! That is new to me. I remember when we redid our master bathroom. I strung toilet paper across the door opening and then cut it with scissors. I will suggest she string paper towels across her kitchen doorway - lol. She is the best neighbor and I try to help her out as much as possible.
