Chili Cheesecake
1 Cup crushed tortilla chips
3 Tablespoons melted butter
2- 8 oz. packages of cream cheeese
2 eggs
1 4oz. can of green chiles drained and diced
1 fresh jalapeno cored, seeded and chopped fine
8 ozs shredded colby /jack cheese
1/4 Cup sour cream
Garnish:
1/2 Cup chopped fresh tomatoes
1/4 Cup choppped black olives
1/4 cup chopped green onions
Preheat oven to 350 degrees.
In a medium bowl combine tortilla chips and butter. Press into the bottom of a 9" springform pan. Bake 15 minutes and remove from oven.
In a large bowl:
combine all other ingrediants except the Sour Cream and Garnishes. Pour over crust and bake 30 minutes. Do not overcook.
Remove from oven and cool in pan for 5-10 minutes. Run knife around edges and remove sides of pan. Spread Sour cream and garnish with tomatoes and olives and onions.
Serve with additional tortilla chips. Makes approx. 12 servings.
This is really yummy and can be served warm or room temp.
