This is from a restaurant chain I work at. I'm not sure if I'll get in trouble for saying their name so if you've had it before you'll know what I'm taking about. This is really good served with sliced baguette or cuban bread croutons!
Creole Baked Goat Cheese
1 TBSP Blendid Oil or Olive Oil
3 TBSP Yellow Onion (1/4" diced)
1 1/2 TBSP Chopped Garlic
1/2 Lb. Fresh Goat Cheese (drained)
1/2 Lb. Roma Tomatoes (seeded and 1/4" diced)
1 1/2 TBSP Cilantro Chopped
1 1/2 TBSP Parsley Chopped
1 1/8 tsp. Tony's Creole Seasoning
1.) Heat olive oil in a medium sauté pan over medium heat, then add the garlic and onions and sauté just until the onions become translucent (Do not brown). Remove from heat and transfer to a paper lined pan. Place in freeser for 15 minutes to cool.
2.) Place Goat Cheese in a mixing bowl and soften with a rubber spatula.
3.) Drain all excess juice from tomatoes.
4.) Add all ingredients to soften goat cheese and mix evenly with rubber spatula until no visible white lumps.
* You can eat cold on croutons or heat in oven @ 350 for about 10 minutes.
* They serve theirs in a roasted red pepper cup which looks fancier but isn't totally neccesary.
Serves: 2 to 4
