A friend made this for her Super Bowl Party and I loved it. Enjoy!
Coll
Mexican Caviar
Combine the following ingredients and chill overnight:
2 (4 1/4 oz) cans chopped ripe olives (black)
2 (4 oz) cans chopped green chiles
2 tomatoes peeled, seeded & chopped (see note)
3 chopped green onions
2 mashed garlic cloves
3 teaspoons olive oil
2 teaspoons red wine vinegar
1 teaspoon pepper
a dash of seasoning salt
*I wouldn't bother peeling the tomatoes, I would also add them right before serving cuz they make the dish too watery as they marinate overnight
*I prefer a medium (to fine) chop to the ingredients.
*I would add jalapenos for heat
Serve with Scoops brand Corn Chips
