This is a recipe used at a local winery that I use to work at. We made this for our Open House.


2-1/2 cups finely shredded sharp Cheddar cheese
1/4 tsp ground nutmeg
1/8 tsp white or black pepper
1/2 cup Riesling wine
4 TBS soft butter sliced into pats
4 medium apples and/or pears

Combine cheese, butter, nutmeg and pepper. Heat wine to a simmer (DO NOT BOIL), and immediately pour over the cheese mixture. Beat with electric mixer until smooth (usually about 10 minutes). Mold into a cheese mold or round bowl and cover. Chill overnight. Unmold onto a serving platter. Let stand at room temperature for at least one hour before serving.

Serve with apple and/or pear wedges and various crackers.
