    Here are some of my favs:

    Meatballs

    1 lb. ground beef
    1 egg
    ½ c. soft bread crumbs
    ¼ c. milk
    1/3 c. finely chopped onion
    ½ t. Worcestershire sauce

    Sauce:
    ½ c. ketchup
    ½ c. chopped onion
    1/3 c. sugar
    1/3 c. vinegar
    1 T. Worcestershire sauce
    1/8 t. pepper

    Mix first 6 ingredients well. Shape into 1” balls. In a skillet over med. heat, brown meatballs; drain. Place in a 2 ½ quart baking dish. Combine sauce ingredients. Pour over meatballs. Bake, uncovered, at 350 for 50-60 min. Yield: 4 dozen.


    Lil' Smokies

    For the sauce, combine 1 part yellow mustard to 2 parts grape jelly. Heat to melt jelly--taste test to see if mixture is too tart or too sweet and add jelly or mustard accordingly until flavor is right.

    Cheesy Crab Puffs

    4 oz. butter
    1 jar Old English Cheese spread (If you can't find this, use Cheeze Whiz, but O.E. is better.)
    1 can crab meat, drained 6 oz. (immitation ok)
    1 1/2 t. mayo (not Miracle Whip)
    1/2 t. garlic powder
    6 English muffins

    Blend 1st 5 ingredients. Spread mixture on split muffins. Cut into quarters. Broil until bubbly and lightly browned. Makes 2 doz. Freezes beautifully (before baking.)


    Black Bean Salsa

    1 can black beans
    1 can whole kernal corn
    1/4 c. finely chopped red onion
    1/4 c. loosely packed fresh cilantro leaves, chopped
    3 T. fresh lime juice
    1/2 t. salt
    1 large tomato, diced
    avacado, diced (optional)

    Mix together and chill to blend flavors. Serve with Fritos.

    Cheese Ball

    (This makes 3-4 cheeseballs...I usually freeze the others.)

    16 oz. finely shredded cheddar cheese
    8 oz. veggie cream cheese
    2 T. minced green pepper
    2 T. minced onion
    2 T. pimento (2 oz. jar)
    1 dash of seasoning salt
    2 T. soft margarine
    1 T. Worcestershire sauce
    Chopped pecans

    Mix all ingredients (except pecans) in food processor until well blended. Use a piece of waxed paper to help form into a ball. Roll in chopped pecans. Serve with Wheat Thins crackers.


    Cheese Straws

    8 T. butter
    1/2 lb. sharp cheddar cheese
    1 3/4 c. flour
    salt to taste
    1/2 t. cayenne pepper
    1 t. Worcestershire sauce

    Preheat oven to 300 degrees.

    Put butter and cheese in container of a food processor. Add the flour, salt and cayenne and Worcestershire. Cover and blend thoroughly. If a food processor is not used, put the flour, salt and cayeene in a bowl. Add the butter, cheese and Worcestershire and using two knives or a pastry blender, blend thoroughly.

    Use a cookie press outfitted with a houndstooth or star dispenser. Push the dough out onto an ungreased baking sheet to make individual straws. Or, if desired, roll the dough out to a 1/8" thickness and cut it into individual strips, which can be twisted if desired or other shapes. (Sometimes I just roll into a log and cut into slices as well. It is best to partially freeze the log before slicing.) Arrange the pieces on ungreased baking sheets or stones. Bake 20-25 min. or until straws are crisp and lightly browned.

    Also, a cheese, pepperoni/salami and cracker tray with sweet-hot mustard is good...something else that is simple, elegant and fabulous is cream cheese (plain) with Reese's hot pepper jelly on crackers.
