I don't remember who posted this on the original board, but I had it saved on my "recipe" hard drive.... enjoy!!

                  The ULTIMATE Smoothie Bar Set-up

                  * Not everything is used in every smoothie (some ingredients are rarely used) … this set-up gives lots of options for almost any combination wanted.
LOTS and lots of ice (did I mention LOTS of ICE?)

                  · Pineapple Juice
                  · Orange Juice
                  · Cranberry Juice
                  · White Grape Juice
                  · Peach Nectar
                  · Apricot Nectar
                  · Coco Lopez (coconut cream)
                  · Coconut milk
                  · Sweet & Sour Mix (recipe below)*
                  · Lime juice
                  · Water
                  · Grenadine syrup (color & extra sweetness) or Simple Syrup – IF fruit is not especially sweet.
                  · Honey
                  · Chocolate Syrup
                  · Ice Cream and/or sorbet
                  · Yogurt (plain or vanilla) – IF you want (adds extra creaminess)
                  · Assortment of liquor (rum, vodka, taquilla, etc). and/or liquore’s (Chambord, Midori, etc. of you choice IF making ADULT versions.
FRUIT (frozen if possible, that way you use less ice & it’s still thick, creamy & COLD)
                  · Frozen Strawberries in Syrup (thawed & run thru blender then put in pour-able container beforehand)
                  · Bananas
                  · Strawberries & Assorted other Berries
                  · Assorted Mellons
                  · Kiwi
                  · Peaches
                  · Apricots (fresh is better, but canned is OK)
                  · Mangos
                  · Pineapple (fresh IF it’s sweet & ripe, otherwise, canned)
                  · Mandarin Orange segments

Add lots of ice, fruit(s) of choice, liquid(s) of choice and blend until a thick, creamy consistency. The more ice you use the thicker it will be (having your fruit frozen allows for that thickness with-out over using ice [watering down] your smoothie.)

I usually will mix up some Colada base in advance (in addition to having the individual liquids) … In a gallon container, mix 1 large can of pineapple juice with 1 ½ cans of Coco Lopez (use 1:1 ratio if you like it less coco-nutty) & mix VERY well. I also pre-blend the frozen strawberries in another container. This helps makes things go more quickly when blending a lot of different versions with other ingredients.

I usually set up 3 “Smoothie Elite’s” and have 2 blenders standing by if needed.

Some of our Favorite combinations (N/A): (I don’t actually measure anymore – do things by site/taste … but I have included measurements on some for those who feel more comfortable starting with a formula. ….
There are tons more, but I’m brain dead at the moment & can’t think of any but these.

IDEA For both the N/A and ADULT versions of frozen drinks … Pretty & tasty – Layer different flavors / colors in clear glasses (by pouring ver gently over the back of a spoon – mixtures must be very thick) – You can also make “tye-died” versions by pouring into different sides of glass & tilting different ways.

                  * HOMEMADE SWEET-AND-SOUR MIX
A base used for making Margaritas
                  3 cups water
                  3 cups sugar
                  2 cups fresh lemon juice
                  2 cups fresh lime juice
Combine water and sugar in large saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Cool syrup.
Mix syrup, lemon juice and lime juice in pitcher.
Chill until cold. (Can be made 1 week ahead. Cover; keep chilled)

Makes 8 cups of Sweet & Sour Mix
NON-Alcoholic: (Obviously add ice to all):
Pina Colada - Obviously the basic … Pineapple juice with Coco Lopez – add some fresh pineapple … add other fruits for variations (Mellon or raspberry coladas are fantastic)
Strawberry Daiquiri - Frozen, sweetened strawberries (thawed) and whirled in the blender is the base … add ice & your good to go (you could add some fresh berries, but that will lighten the intensity of the color)
Strawberry Colada .. you got it … just mix the two basics together.
Mango Lassi –Mango, yogurt and a touch of honey … very refreshing (especially with spicy foods)
                  APRICOT FROST
Apricots (use canned if fresh are not sweet)
Simple syrup (to taste – if using fresh)

                  Grenadine syrup

NOTE: For FRUIT based margaritas ... rim glass with super fine sugar instead of salt. For regular margaritas - liven up by using colored margarita salt.
Stars & Stripes Colada (notes on N/A version)
                  3 Tablespoons Light Rum
                  1/4 Cup Cream of Coconut
                  1/4 Cup Pineapple Juice
                  1 Scoop Crushed Ice
                  4 Tablespoons Frozen Pureed Strawberries
2 Tablespoons Blue Gelatin Mix (recipe follows)
                  - 1 (6) oz. Package Blue Gelatin
                  - 1 Cup Hot Water
                  - 1 Cup Blue Curacao
Dissolve package of Jell-O in hot water and add the Blue Curacao. Gelatin should be firm in approximately 4 hours.
Puree the strawberries with some ice & layer in the bottom of a glass.
Blend the rum, cream of coconut, pineapple juice and ice in a blender until smooth.
Gently pour this Piña Colada mixture (over the back of a spoon)on top of the strawberries to create a layered effect.
Cut the blue jello in pieces, then beat it with a blender to "chop" it fine. Carefully layer (using a spoon) the blue gelatin on top of the drink. Garnish with a pineapple slice and a cherry.
                  FOR A N/A version ...
Leave the Blue Curacao out (make blue jello using the regular jiggler recipe) & Leave the rum out of the Pina Colada mixture.

                      1/2 cup milk
                      3/4 tsp. orange juice concentrate
                      1 packet Splenda
1 level tsp. Hershey's dry cocoa
                      2 drops vanilla
                      1/4 cup dry milk powder

Blend for 15 seconds. Serves 1.

                      1/3 cup skimmed milk
                      1/2 frozen banana, cut up
                      1/4 cup drained crushed pineapple
1/4 cup frozen berries, any kind
                      2 Tbsp. Splenda
                      2 drops vanilla

Blend until smooth and frothy in food processor. Serves 1. Forgot to add skimmed to the milk in the Orange Espresso recipe. Skimmed milk makes them get thicker.

Wow that is a crap load of smoothies! You must really like them. This time of year I crave a smoothie almost every day... actually I crave them even when it's cold out. Have you ever used honey in replacement of sugar. I don't care for the substitute sugars too much. I still want the sweet flavor though. I tend to use vanilla yogurt because the plain yogurt does not have much flavor. Any suggestions?

I've never had a smoothie. I've seen smoothie shops popping up but have never stopped in.
