Mexican Wedding Cookies
(Pecan Melt Aways)
1 c. pecan halves
1 c. flour
1/4 c. sugar
1/4 tsp. cinnamon
1/8 tsp. salt
1/2 c. (1 stick) unsalted butter, room temperature
1 c. confectioners sugar
Place first 5 ingredients in to a food processor and process until mixture resembles course meal. Add in butter and mix until a ball forms. Place in plastic wrap and form a disk. Refrigerate for 1 hour. Roll into 1 tablespoon size balls. Place on a parchment covered cookie sheet 1 1/2 inches apart. Bake at 325F. degrees for 30 minutes or until just slightly golden. Remove from over and leave on cookie sheets for 10 minutes. Remove and place on racks. Cool completely. Roll cookies in powdered sugar.
