This is a great dessert for the fall months (or any other time for that matter-lol!)
Cake:
1/4 lb butter
1/2 C packed brown sugar
1 C sugar
2 eggs
2 1/4 C sifted cake flour
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp baking soda
1 C buttermilk
3/4 C canned pumpkin
1/2 C nuts of your choice ( I love Walnuts or chestnuts with this)
Cream butter in a mixing bowl and gradually add the sugars and beat until fluffy. Beat eggs in one at a time. Sift together flour, baking powder, salt, soda, and spices. Add to creamed mixture alternately with buttermilk. Blend in pumpkin and nuts.
Pour batter into a buttered cake pan and bake in a preheated 350 degree oven for 35-40 minutes.
Brown Butter Frosting
1/4 lb butter
1 lb powdered sugar
1 tsp vanilla
4-5 tbs light cream
in a sauce pan brown butter over low heat stirring occasionally, until light amber in color. In a small mixing bowl, beat together butter, sugar, salt, and vanilla while gradually adding cream. Continue beating until smooth and of spreading consistency.
