    Gary Solomon's Coconut Macaroons

    14 oz. flaked coconut
    1 can sweetened condensed milk
    1 tsp. pure vanilla extract
    2 egg whites
    pinch of salt

    Place the coconut, milk and vanilla in to a large bowl. Mix with large spoon to combine. Place the egg whites and salt into the bowl of a stand up mixer. Beat until egg whites are fluffy. Fold gently into coconut mixture. Using a 1 inch round ice cream scooper scoop out mixture on to parchment lined cookie sheets. Bake for 25 minutes at 325F. degrees until golden.
