More like a cake than a bread......
Makes 2 9 X 5 loaves
Beat Together:
2 Cups Sugar
1 Cup oil
4 Eggs
Sift Together:
3 Cups of Flour
1 Tbs. baking powder
Add to creamed mixture alternately:
sifted mixture and 1 Can of evaporated milk to all are used.
Topping and Streusel Mix::
1/2 Cup of coarsely chopped nuts with 1/2 cup of sugar and several Tbs. of cinnamon ( enough to make brown)
Heavily grease your loaf pans with crisco so that it is sort of thick on the inside of the pan. I use butter flavor. Sprinkle the topping mixture inside the pan to coat all sides.....as if you were flouring the pan. It will stick to the crisco so that your bread has a crunchy cinnamon nut crust.
Spoon batter mixture into the pan about a third of the way...then sprinkle streusel topping mix then another layer of batter ..then a final layer of topping mix. Repeat for second loaf.
Bake at 350 degrees for 40-50 minutes till tests clean and lightly golden on top.
Let cool slightly before removing from the pan. Loaves will be cinnamon crusted and yummy.
