2 cups flour
2 TBS sugar
1 tsp salt
3 tsp baking powder
2 eggs, separated
1-3/4 cups milk
4 TBS melted butter
**nutmeg or cinnamon (add to dry ingredients if using)

Sift dry ingredients in a bowl and then add the egg yolks and milk. Slowly beat until smooth. Add melted butter. Beat whites until stiff and then gently fold into the batter.

Makes about 8 waffles
