I recently aquired this recipe from a well known chef and reduced the amounts (as I dont need to make enough for 200+ people). This is really good and you can bake them in regular size muffin tins or silicone molds if you have them!
Molten Lava Cakes
1 1/3 cup SemiSweet chocolate chips
1 1/3 cup Butter
6 Whole Eggs
6 Egg Yolks
3/4 cup Granulated Sugar
1/4 cup All Purpose Flour
Combine chocolate and butter, melt on double boiler. Heat only enough to melt, do not burn chocolate!
In medium bowl combine whole eggs, egg yolks and sugar, whisk together.
Once chocolate mixture is melted, add into egg mixture*. Stir until combined. Add in flour, Whisk until smooth. Let sit overnight covered in the fridg. Grease and sugar(granulated) muffin tins or silicone molds. Fill 1/2 to 3/4 full. Bake 400 degrees approximately 8-12 minutes. You want the edges set up but the center to look like pudding. Remove from oven, run knife along edge and invert on a plate. Dust with powdered sugar.
These are the best when served warm with ice cream!
*Just a reminder, if you heat the chocolate/butter mixture too much and add it to the eggs, you could scramble the eggs! That is why it is best to use the least amount of heat needed to melt the chocolate. A good method is to heat a pot of water to boiling. Once boiling place bowl of chocolate and butter mixture on top, TURN OFF HEAT! This should be all the heat you need to melt the chocolate. It should be ready to use in about 5 minutes after you set it on the pot of boiling water.
