    Powdered Sugar Cookies (Kourabiedes – Greek Cookies)

    2 lbs. Unsalted land-o-lakes butter (softened at room temp)
    ½ lb. Roasted peeled thickly chopped almonds – chop by hand NOT blender
    1 egg
    2 tsp. Vanilla extract
    3 tbsp Grand Marnier (Orange liquor) - or use 1 tsp. Orange extract or use some grated orange zest.
    3 tbsp powdered sugar
    2 lbs. All purpose flour
    1 lb. Powdered sugar (this is for after the cookies bake)

    Put butter in a blender, sugar, egg, vanilla extract, grand marnier, and blend for about three minutes. Then put the almonds in and blend for about 20 SECONDS and stop the blender.

    Put about ¾ of the flour in the mixture and mix with hands. Do this until the mix is soft and after that put the rest of the flour. In the very end, the mixture should not stick to the fingers or palm of hands. Then let the mixture rest (put aside) covered for 10 minutes.

    Make dough the desired shapes you want. Bake the cookies in a preheated oven 400 degrees for about 20-25 minutes (or until they start to brown). Take them out of the oven and immediately sprinkle powdered sugar on them. Make sure the layer of the powdered sugar is sort of thick…not really thin layer. ENJOY!!!!!!!!!!!

    The taste of the cookie is more like vanilla (because of the vanilla extract).
