I got this recipe from my MIL over the holidays.
MINI CHIP SNOWBALL COOKIES
3 sticks butter, softened
3/4 c. powdered sugar
1 T. vanilla
1/2 t. salt
3 c. flour
1 (12 oz.) pkg. mini chocolate chips
1/2 c. finely chopped nuts
powdered sugar
Preheat oven to 375 degrees.
Beat butter, sugar, vanilla and salt. Gradually mix in flour. Add chips and nuts. Shape into 1 inch balls. Place on ungreased cookie sheet. Bake for 10 to 12 minutes until set and lightly browned. Cool 10 minutes then roll in powdered sugar.
I rolled my cookies in powdered sugar right out of the oven, then when they cooled I rolled them in powdered sugar again.
