I orignally got this from the Top Secret Recipies - Krispy Kreme Klone, but I've made a few changes and not sure anymore how close it is to the original recipe.

    Yeast Risen Doughnuts:

2 pkg Yeast (Regular or Fast Acting)
    1/4 cup WARM water (100f - 110f [37.7c - 43.3c])
    1 cup Milk (Scaled and cooled to 100 - 110 )
    1/2 cup sugar
    1 tsp. Salt
    2 Eggs
5 Cups All Purpose Flour (or 50/50 AP & Cake flour [omit corn starch])
    4 Tbl Corn Starch
    1/3 cup Shortning

    1. Dissolve yeast in 1/4 cup warm water and 1 tsp Sugar. Let "proof" for 10 minutes.

    2. Add Milk, Sugar, Salt, Eggs Shortning and 2 cups flour.

    3. Beat together on low for 30 sec. then medium speed for 2 minutes slowly add rest of flour till smooth

    4. Cover and let rise in warm (80f 26.6c) place until double (about 1 hour)

    5. Punch down, turn out onto floured surface and roll to 1/2 inch

    6. Cut with doughnut cutter and place on floured tray or peel

    7. Cover and let rise again for 30 to 40 minutes

    8. Heat oil to 350f [176.6c] and fry about 1 minute per side or until golden brown (this takes practice to get brown, but not burn)

    STANDARD GLAZE:

    1/3 cup Butter or Margerine
    2 cups Powdered Sugar
1 tsp Vanilla (I never measure, just dollop)
    4-6 Tbl Milk (or water)

    Heat Butter till melted
    Stir in Sugar and Vanilla
Stir in Milk (or Water) 1 Tbl at a time

    CHOCOLATE GLAZE:

4 oz. of your favorite Chocolate
    1/3 cup Butter or Margerine
    2 cups Powdered Sugar
1 tsp Vanilla (I never measure, just dollop)
4-6 Tbl Milk (DO NOT USE WATER WITH CHOCOLATE!)

    Melt chocolate

(I place mine in a Zip-Loc freezer bag, microwave 20 seconds on high, knead, nuke for 10 more seconds, and repeat until chocolate is smooth. Then just clip the corner off the bag and pipe into recipe)
    Heat Butter till melted
Stir melted chocolate into heated butter
    Stir in Sugar and Vanilla
Stir in Milk (or Water) 1 Tbl at a time
Working...
