To SAVE on clean-up measure the 2 cups of buttermilk in a quart size liquid measuring cup, then measure the oil on top of the buttermilk (2 & 1/2 cups total liquid) and stir the eggs right into the measureing cup with the liquid.
"Those Muffins"
2 & 1/2 cups flour
2 cups sugar
2 & 1/2 t. baking soda
1 t. salt
2 t. cinnamon
1/2 t. freshly grated nutmeg
2 cups buttermilk
1/2 cup oil
2 large eggs
Combine flour, sugar, baking soda, salt, cinnamon & nutmeg in a large bowl. Stir fork or whisk to mix well, and set aside.
Combine buttermilk & oil and stir briskly with a fork. A eggs and stir until well mixed. Pour into flour mixture and stir with a large wooden spoon/ Note: there may be some small lumps, but if there are no dry spots on sides or bottom of bowl, you have mixed enough.
Grease, butter or use cooking spray on each muffin cup. Fill each 1/2 to 2/3 and bake at 375 degrees until toothpick inserted in middle comes out clean, 10 - 13 minutes.
Allow to rest in pan 5 minutes, then remove nd serve with butter.
