The Great Harvest Bread Co. made this bread for a February special. It was amazing. But, now it isn't on the menu anymore, so I concocted my own!

The first try wasn't too great, though, since the bread dough was too old and didn't rise! But the second try was pretty darn good, if I do say so myself!

    White Chocolate Cherry Bread

    1 loaf frozen white bread
    ¼ cup brown sugar
    ¼ cup + 3 Tbsp flour
    1 tsp vanilla
    2 Tbsp butter
¼ cup dried cherries, coarsely chopped
    ¼ cup white chocolate chips

    1. Let bread dough thaw and rise.
    2. While bread is thawing, mix brown sugar, flour (reserve 1 Tbsp), butter, and vanilla with a pastry cutter, or forks.
    3. Toss chopped cherries with 1 Tbsp flour (prevents them from sticking together)
    4. Turn dough onto floured surface and roll out to approx. 9 x 15 inches.
    5. Sprinkle dough with brown sugar mixture, and then the cherries and white chocolate chips.
    6. Roll up dough, pinch ends and tuck under. Place in a greased 8 x 5 loaf pan. Allow to rise to to 1” above the rim of the pan.
    7. Bake at 350ºF for 25 minutes.
    8. Remove from oven and allow to cool completely before removing from pan.
