    Elaine's Peach Cobbler

    Peel and slice 8-10 cups peaches and set aside. Spray 9 X 13 pan with pam and set aside. Line bottom & sides with prepared pie crust.
    Filling-In large saucepan combine and cook till thickened stirring constantly on medium heat:

    3 cups sugar
    6 Tbsp. cornstarch
    1 1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    3 cups water
    1 1/2 tsp. lemon juice
    When thickened...add fruit. Pour in 1/2 of filling. Add another pie crust over this then pour in remaining filling. Sprinkle 1/2 box of yellow cake mix over top and dot with 1/2 cup margarine. Bake at 375 for 1 hour
