This was in my Betty Crocker cookbook. I'm not sure the year, it is so well used the covers and front pages are missing.
Banana-Nut Cake
2 1/3 cups all purpose flour
1 2/3 cups sugar
1 1/4 cups mashed bananas (about 3 medium)
2/3 cups shortening2/3 cup buttermilk
3 eggs
1 1/4 tsp. baking soda
1 1/4 tsp. baking powder
1 tsp. salt
2/3 cup finely chopped nuts
Preheat oven to 350.
Grease and flour 13X9 inch oblong pan or two 9 inch round pans.
Beat all ingredients on low scraping bowl constantly for 30 seconds. Continue to beat on high scraping bowl occasionally for 3 minutes.
Pour into pans.
Bake until toothpick comes out clean. 45-50 minutes for oblong, 35-40 minutes for layers.
Cool and frost.
