Fudge Cupcakes
4 squares semisweet chocolate
2 sticks butter (no substitutes)
3/4 cup chopped pecans, optional
1 3/4 cup sugar
1 cup unsifted flour
4 large eggs, beaten
1/2 tsp salt
1 tsp. vanilla
Melt chocolate and butter in saucepan. Add the pecans and stir until coated, if using pecans. In a mxing bowl, combine the sugar, flour and salt. Add the chocolate mixture and the beaten eggs. Mix until blended, do not beat. Add the vanilla. Mix. Place in cupcake tins lined with papers. Fill the papers almost full. Bake at 325 F. for 35 minutes. Makes 16 cupcakes.
