Butterscotch Cashew Bars
From the Kitchen of: Land O' Lakes Desserts 18 bars
CRUST 1½ c. all-purpose flour 3/4 c. firmly packed brown sugar ½ c. butter, softened ¼ tsp. salt TOPPING ¼ c. light corn syrup 1 (6 oz.) pkg. (1 cup) butterscotch-flavored chips 2 tbsp. butter 1 tbsp. water ¼ tsp. salt 1½ c. cashew halves and pieces Heat oven to 350°. Combine all crust ingredients in large mixer bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture into a greased 13"x9" baking pan. Bake for 10 minutes. Meanwhile, place all topping ingredients except cashews in 2 qt. saucepan. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth (4-7 minutes). Stir in cashews until well coated. Spread cashew mixture over hot, partially baked crust. Continue baking for 10 minutes or until golden brown. Cool completely. Cut into bars or triangles.
