Eggnog Quick Bread
2 eggs
1 cup sugar
1 cup fresh (not canned) eggnog
1/2 cup butter or margarine, melted
2 tsp brandy or rum extract
1 tsp vanilla
2 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
Heat oven to 350 degrees F. Grease bottom only of 9"x%' loaf pan. Beat eggs in a large bowl, add sugar, eggnog, margarine, rum extract, and vanilla. Blend well. Add flour bakiing powder, salt and nutmeg, stirring just until dry ingredients are moistenend. Pour into greased pan. Bake at 350 for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes, then remove from pan. Cool completely. Makes 1 loaf.
Notes: Can be baked in 2 small pans. Reduce baking time to 35-40 minutes.
I tried using soy eggnog when the store was out of regular. It didn't rise as well, so was pretty heavy. I wouldn't recommend it.
