This was excellent. We did them for a baby shower on Saturday, and tinted them with green, purples, pinks, blue, yellows, from deep to the palest shades.
1/2 cups hot water
3 cups sugar
1/4 teaspoon cream of tartar
1 teaspoon pure vanilla
2 & 1/2 cups powdered sugar, sifted
Put water, sugar and cream of tartar into a saucepan. Bring mixture to a boil.
Bring to 226 degrees on a candy thermometer. PLEASE USE A THERMOMETER.
Cool to 110 degrees (Don't put in refrig)
Add remaining items.
Add food color to whatever tint you wish, but add slow drop at a time because you can't take it away once it is done!
Spoon over petit fours on racks.
Anything that falls through racks can be reheated and used.
A good recipe to keep!
