    Louisiana Swamp Cake

    one 18 & 1/4 ounce German chocolate cake mix
    3 large eggs
    3/4 cup water
    1/2 cup liquid coffee
    1/3 cup vegetable oil

    Preheat oven to 325 degrees. Mix all cake ingredients well and pour into a
    greased 11 x 15 inch pan. Bake 20 minutes or until cake just begins to leave
    sides of pan.

    Filling
    three 7 ounce jars marshmallow creme
    1 cup broken pecans

    Spoon small dollops of creme all over hot cake but be careful not to spread
    around as it will pick up the top of the cake. Sprinkle pecans over
    marshmallow creme.

    Swamp Topping
    one 12 ounce package chocolate chips
    1 tablespoon butter
    1 can milk chocolate frosting
    1/3 cup liquid coffee
    1 teaspoon almond extract

    Micro melt chips in an 8 cup measure 2 minutes on HIGH. Stir and then stir in
    butter, frosting, coffee and almond flavoring till ribbony smooth. Pour over
    filling unevenly - this is a swamp so just dollop so you can still see the
    nuts and marshmallows. Now you can let it sit for a while but as soon as your resistance gives out.. wade in.

    My next door neighbor made this and brought my husband and I each a big piece to try for sharing the recipe with her.

    We thought it was very good. Something different from the usual kind of cake.
