I posted this recipe back on the old board. I got so many compliments on it! I also had some people that tried new things with the recipe, substituting different flavors of cake mix and pudding in the bread. Yesterday I tried this per one suggestion, substituting the lemon cake mix for chocolate, and the vanilla pudding also for chocolate. It turned out great! So it got me to thinking about other combinations for this bread that might be good--yellow cake mix and pistachio pudding, white cake mix & french vanilla, etc.? This is a nice moist bread, but near cake-like consistency. I added a few chocolate chips on the top of the chocolate. If anyone else tries any other combinations, I'd love to hear about it! Thanks! Lemon Bread
1 pkg. lemon cake mix
1 cup water
4 eggs
1 sm. pkg instant vanilla pudding
1/2 cup oil (any kind seems to work)
Put all together and beat at medium speed for about 5 minutes or until well combined. Bake in 2 large bread pans (I greased and floured mine) at 350 for 30-40 min. (check with toothpick--but mine took all of 40 minutes) this also freezes well.
