Made these tonight for our Super Bowl party tomorrow. It's one of my family's favorite cookies. Hope you enjoy them, too!
CHOCOLATE CRISPY COOKIES
½ cup butter, softened
1 cup sugar
1 egg
1 tsp. vanilla extract
1 ¼ cups flour
½ tsp. baking soda
¼ tsp. salt
2 cups Rice Krispies
1 (6 oz.) pkg. chocolate chips
Cream butter; gradually add sugar, beating until light and fluffy. Add egg and vanilla, beating well. Combine flour, soda and salt; add to creamed mixture, beating well. Stir in the Rice Krispies and chocolate chips. Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350 degrees for 13 minutes. Cool slightly on cookie sheets; remove to wire racks. Yield: 3 – 3 ½ dozen cookies.
