I don't know where I got this, but I just made these and they are so good and wanted to share with you guys..
Zucchini Bites
1 Envelope Lipton Onion soup mix
1 C shredded Swiss cheese
4 Eggs
1/4 C garlic & herb dry bread crumbs
2 T parmesan cheese
1 t dry Basil
1 1/2 C grated Zucchini
Combine all ingredients in large bowl. Spoon
mixture into well greased mini muffin tins.
Bake 350 for 20 minutes. Makes 24.
Note: The batter will look alittle watery because of the zucchini but that's ok, just
stir it up. Also in the recipe is says that
these freeze well.
