Louisiana Pecan Pie
Ingredients:
1 c. chopped, toasted pecans
1/4 pound butter
1 cup brown sugar
3/4 cup corn syrup
1/4 cup honey
zest of 1 orange, chopped
1 t. vanilla
3 eggs
1/8 t. cinnamon
1/8 t. nutmeg
1 deep dish pie shell, uncooked
Preheat oven to 425 degrees. In a heavy saute' pan, brown the butter over medium -high heat. The browning around the edges of the butter gives this pie its delicious flavor. Do not burn the butter. Remove butter from the heat and allow to cool slightly. In a latge mixing bowl, combine brown sugar, corn syrup, honey, orange zest, vanilla, eggs, cinnamon & nutmeg. Using a whisk, blend ingredients until well incorporated. Add the browned butter and the pecans, blending well into the egg mixture. Pour mixture into the pie shell and bake in center rack of oven for 10 minutes. Reduce to 375 degrees and bake for 35 minutes longer or until firm/set in center. Allow to cool thoroughly before slicing.
