It was my turn to hostess coffee hour after church today, and this was a big hit---


2 eggs
2 C. sugar
2 tsp. soda
1/8 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
6 cups raw Granny Smith apples, chunked into medium sized pieces (takes about 4 apples)
2 cups flour
1/2 cup oil
1 cup chopped nuts


Beat eggs. Add sugar and cream well. Add vanilla.

Sift together flour, salt, soda and cinnamon. Add alternately with oil to egg and sugar mixture. Stir in apples and nuts, a few at a time. The batter will be THICK and very stiff. Mix well. Pour into greased and floured pan. Bake 1 hour at 350.

I frosted mine with a cream cheese frosting, but a dollop of Cool Whip would be good as well.
