DH's favorite! I use the store bought whipped cream cheese icing.

Red Velvet Cake:

Beat together:

1/2 c. Crisco
1 1/2 c. sugar
2 eggs
1 t. vanilla

Mix in cup and set aside:

2 oz. red food coloring
2 1/2T. baking cocoa

Add to first mixture while alternating with the food coloring mixture:

2 1/2 c. flour
1 c. buttermilk

Mix together and FOLD into batter while foaming:

1 T. vinegar
1 t. baking soda

Bake in 3 greased and floured 8" round pans @ 300 for about 30 to 35 minutes (sometimes longer) until toothpick comes out clean. Cool 10 minutes & turn onto wire racks to cool completely.
