Red Velvet Cake

2 1/2 C. flour
1 1/2 C. sugar
2 tsp. cocoa
1 tsp. baking soda
1 tsp. salt
1 tsp. white vinegar
1 C. buttermilk
1 tsp. vanilla
2 C. vegetable oil
1/4 C. red food coloring
3 eggs

Mix all dry ingredients and set aside. Blend the eggs and oil together. Add the dry ingredients to the egg and oil mixture blending until smooth. Add the buttermilk and food coloring and continue to blend until well incorporated. Add the vinegar, vanilla and mix some more. Bake in 3-8" round cake pans at 350F. degrees for 30 minutes. Cool completely and ice. Use your favorite cream cheese icing with some pecans
