    These went to the meeting yesterday along with the cakes. Not one was left!

    Apple & Pecan Muffins

    2 cups sugar
    2 large eggs
    1 cup oil
    3/4 cups cooking apples, Chopped (I used GOlden Delicious)
    1 cup toasted pecans, chopped
    1 t. cinnamon
    2 & 1/2 cups flour (White Lily)
    1 t. salt
    1 t. soda
    1 t. pure vanilla
    Mix sugar, eggs, oil, apples, pecans and cinnamon. Mix well and laet stand for 20 minutes.
    Add flour, salt, soda, and vanilla.
    Use liners and fill half full.
    Bake in preheated oven at 325 degrees for 15 - 20 minutes or until light golden brown.
    This will make about 36 muffins. More if you use mini tins.

    Note:
    You store this dough in the frig for several days.
