Snickerdoodles are my favorite cookies. This version, with apple butter, is marvelous.
Apple-Filled Snickerdoodles
makes 2 1/2 dozen
1/2 C (1 stick) margarine or butter, softened
1/2 C + 3 TBS granulated sugar, divided
1/2 C brown sugar
1 egg, beaten
1 1/4 C flour
1/2 tsp baking soda
3 C Apple Cinnamon Toasted Oats Cereal, crushed to 1 1/4 C
1 tsp cinnamon
1/3 C apple butter or apple sauce
Preheat oven to 350� F. Lightly grease cookie sheets.
Beat margarine, 1/2 C granulated sugar and brown sugar in bowl until creamy. Add egg and mix well. Stir in flour and baking soda. Add cereal, stirring until well combined. Combine cinnamon and remainng 3 TBS granulated sugar in a small bowl. For each cookie, roll 1 level tablespoon of doug into a ball. Roll ball in cinnamon sugar mixture. Place on cookie sheet. Press thumb in center of each ball to form a well. Spoon 1/2 tsp apple butter or sauce into well. Bake for 10 to 12 minutes or until lightly browned. Let stand for 1 minutes before removing cookies from baking sheet.
