You can use any fresh fruit... Blueberries (which I just made), peaches or apples.
Dutch Apple Cake
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup shortening (1/4 stick oleo...yup that's what it say.. I did use butter)
1 teaspoon vanilla
2/3 cups milk
1 cup sugar
Sift flour, salt and baking poder. Add sugar
Cut in "oleo", combine slightly beaten egg, milk and vanilla. Add gradually to dry mixture.
Spread this in a oblong pan (jelly roll). Pare and slice 4 apples (blueberries - I used a pint... or sliced fresh peaches can also be used).
Push apples into dough.
If wanted place rasins between apples (she doesn't have an amount.. I didn't use raisins with the blueberries Smile)
Sprinklw with sguar and cinnamon and dab with butter. (again no amounts given... but one can never have too much sugar and cinnamon, IMHO)
Bake at 375 for 35 min.
Cool and cut into squares.
