Jalapeno Corn Bread
1 cup corn meal
1/2 t. baking soda
3/4 t. salt
1 (1 pound) can cream style corn
2 eggs, beaten
1/4 cup bacon drippings
1 cup milk
1/2 pound american cheese, shredded
1 medium onion, chopped
2 Jalapeno chilies, chopped
Stir cornmeal, soda & salt together in a mixing bowl. Add corn, eggs drippings & milk. Stir until well-mixed, and dry ingredients are moistened. Pour half the batter into a greased 9 inch square pan. COmbine cheese, onion and chilies and scatter over the batter. Top with remaining batter and bake in preheated 350 degree oven for about 45 minutes or until done.
Makes about 8-9 servings.
