Spoon Bread
1 cup yellow corn meal
1 & 1/2 cups boiling water
2 T. butter, melted, plus some for the pan
3 large eggs, seperated
1 cup buttermilk, room temp
1 t. salt
1 t. baking powder
1/2 t. baking soda
Preheat oven to 400 degrees.
Butter a 2 quart casserole dish
Put cornmeal in the bowl and pour boiling water over, stirring briskly so no lumps form.
Add the butter, egg yolks, buttermilk, salt, BP & BS. Stir until just well blended.
Beat the egg whites just until soft peaks form.
Gently stir 1/4 of the whites into cornmeal mixture, then fold in the remaining whites.
Spoon into your buttered dish.
Bake until straw inserted into the middle comes out clean, maybe 40-45 minutes
